This recipe is one of my original ones from back when I first started my blog . . . a long time ago! We weren’t doing YouTube, and Paul wasn’t taking my pictures, so things in this post are looking a lot better than they were before. So, this is kind of a repeat, but a good one!
These are the perfect cupcakes for a St Patrick’s Day party . . . or to take to a Guinness and Bailey’s lover that you may know. I never would have chosen these cupcakes to try if I hadn’t been making them for someone else as a present . I don’t particularly like Guinness (much to my father’s dismay!), but there is something about the combination of the chocolate and the Guinness that is so divine! It’s moist, chocolatey, with a hint of the Irish. If you’re not intrigued yet, you will be with the Bailey’s buttercream that tops the cake. If you don’t have Bailey’s you can use any Irish liqueur, and if you don’t have Guinness, you can substitute it with Kilkenney or another Irish Stout!
Guinness Chocolate Cupcakes Ingredients:
1 cup Guinness stout (beer)
1 cup unsalted butter
3/4 cup cocoa powder
2 cups all purpose flour
2 cups sugar
1 1/2 tsp baking soda
3/4 tsp salt
2 large eggs
2/3 cup sour cream
Bailey’s Buttercream Frosting Ingredients:
3 to 4 cups icing sugar
1/2 cup unsalted butter, at room temperature
3 to 5 tbsp Baileys Irish Cream
